Deep Fryer - Items Of Wisdom
For a time I worked during a convenience store as a clerk and cook and I used a deep fryer quite a bit for cooking battered chicken and French fried potatoes.
After all the chicken does not start out battered. It comes delivered frozen in big cardboard boxes. Before the chicken is prepared for the cooking part it should be prepared and time to thaw out. Each piece of chicken is rinsed in cold water, then put in an exceedingly vat of tenderising, salty water to soak for several hours in a refrigerated area. It is once more rinsed and kept cold, till needed for cooking.
When required for cooking the chicken is breaded in a special spicy flour combine, dipped in spice water, and breaded with combine again. Each piece is than rigorously placed in the boiling oil within the deep fryer; starting with the large, meaty pieces, and finishing with the skinny bony pieces. This gives the thick meaty items more time to cook. They get the hottest oil within the pot to start out off the cooking process. The deep fryer is on a timer and half means through the cooking process the timer elicit an alarm which notifies you that it's time to stir the chicken, thus it gets all sides cooked evenly, even the perimeters touching when 1st place in the fryer. After stirring the chicken it cooks until the tip of cooking cycle alarm goes off. Then the pot elevator will automatically carry the cooking basket out of the new oil, allowing the chicken to drip off the surplus oil.
The deep fryer also cooks French fried potatoes. Once cutting the potatoes into the elongated cube form during a cutter, the fries are battered, dipped and battered again. They then will be gently lowered in hands full, into the boiling oil. The cooking is once more controlled by a timer, that sounds when the cooking cycle has completed. After four cooks the oil in the fryer wants to be filtered to clean it for future cooking cycles. Another alarm indicates when oil filtering wants to occur.
The heat on the oil is turned off, thus the oil will relax enough to work with. The cooking basket is raised and aloof from the fryer. A valve is turned to allow the oil to empty down into the filtering drawer. When the oil has drained the empty oil reservoir is brushed, including the heating coil component, to get rid of something sticking to their surfaces. A pump is turned on which circulates the oil repeatedly through the filter. The filtering can take place for 10 or 15 minutes, relying how dark the oil seems in color. When the oil has become lighter in color it is pumped back up to the oil reservoir, after the valve at the underside of the pot has been closed. The heating component is turned on and the oil is brought make a copy to cooking temperature. The unpleasant half is scooping out the sludge at the bottom of the filter drawer. Then the cleaned filter is dusted with a special powder, place back as an alternative under the fryer pot, and all is prepared to travel again.
Yes the fryer does most of the cooking for you however be careful for the new oil when loading the food into the cooking basket. Even sporting rubber gloves will not stop the oil from burning you, should it splash on your hands as the food drops into the recent oil. The key is to be brave and gutsy. Get the food close to the oil before you drop it in. That manner the splash is really tiny, and doesn't jump up to fry your wrist.

1997 renault megane cam kit?
i have a 1997 renault megane 1.6 8v and was thinking about getting it cammed and want to know if it would be worth while as it costs around £200 for the cams, i currently have a straight thru exhaust cat back and a pipercross induction kit, which would also help going with the cams. what kind of bhp gains could i expect.. these are the figures from the 2 cams i am considering:

it's a low compression engine with 8 valves and only one cam there is no point in putting in a different cam you could make it undriveable with no power at all at the bottom end
